The cheese knife is a specialized kitchen knife designed for clean and controlled cutting of a wide variety of cheeses, from soft to semi-hard textures. Its compact blade and precise geometry allow accurate cuts without crushing or tearing the product.
With a 140 mm blade, this knife offers excellent control and maneuverability, making it ideal for detailed work on cheese boards as well as for controlled cuts during service or preparation.
This knife is hand forged using the Cumai laminated construction technique, combining layers of high-carbon steel with copper and brass. This process creates a blade with strong cutting performance and a distinctive visual character, making each piece unique and unrepeatable.
The cutting edge is made from Carbon Steel 1095, providing sharpness, responsiveness and a precise feel during cutting.
The handle is handcrafted from Olive wood, copper and brass, shaped to provide comfort, balance and secure control during use.
Each blade is carefully sharpened by hand using Japanese water stones to ensure a clean, consistent and reliable cutting edge.

🧼 CARE INSTRUCTIONS
We recommend washing the knife by hand after each use and drying it immediately.
DO NOT USE DISHWASHER.
The blade will naturally develop a patina over time. This natural phenomenon does not affect the performance or quality of the knife and is a characteristic of carbon steel.
