The Gyuto Cumai chef knife is a versatile and essential kitchen tool for both professional cooks and home chefs.
With a 215 mm blade and a design that balances strength, agility, and comfort, this knife excels at slicing, dicing, chopping and filleting a wide variety of ingredients — from vegetables and fruits to meats and fish.
Its long blade allows extended reach for larger items while remaining light and easy to maneuver, giving you precision and control whether you’re preparing everyday meals or more elaborate dishes.
This Gyuto is hand forged from Damascus steel and copper using the Cumai construction technique, combining multiple layers of high-carbon steels to produce excellent performance and a striking, unique pattern that will age beautifully with use.
The handle, crafted from Purple Heart and bronze wood, is handmade by me and shaped to provide comfort, balance and a secure grip during prolonged use.
Each blade is carefully sharpened by hand with Japanese water stones to ensure a reliable and consistent cutting edge.

🧼 CARE INSTRUCTIONS
We recommend washing the knife by hand after each use and drying it immediately.
DO NOT USE DISHWASHER.
The blade will naturally develop a patina over time. This natural phenomenon does not affect the performance or quality of the knife and is a characteristic of carbon steel.
