The Kiritsuke chef knife is a Japanese-style kitchen knife traditionally associated with professional chefs and serious home cooks. Its long, flat blade and sharp pointed tip combine precision, power and versatility, making it suitable for slicing, chopping and detailed work on vegetables, fish and meats.
With a 220 mm blade, this Kiritsuke provides extended cutting length and confident control, ideal for cooks who appreciate a knife with reach, stability and responsiveness on the cutting board.
This knife is hand forged from high-carbon steel 1095 and 15N20 using the Damascus technique, creating a blade composed of 74 layers of steel that delivers excellent cutting performance and a unique visual character. Each piece is distinctive and evolves naturally with use.
The handle is crafted from natural swamp oak wood, handcrafted for comfort, balance and secure grip during prolonged use.
Each blade is carefully sharpened by hand using Japanese water stones to ensure a precise, consistent and reliable cutting edge.
