The Kiritsuke chef knife is a versatile Japanese-style knife that combines precision, control and versatility in a single blade. Traditionally associated with professional kitchens, its long, flat profile and pointed tip make it ideal for slicing, chopping and precise detail work on vegetables, fish and meats.
With a 210 mm blade, this Kiritsuke offers an excellent balance between reach and maneuverability, making it suitable for both professional cooks and experienced home chefs looking for a refined and expressive cutting tool.
This knife is hand forged using the Cumai construction technique, combining layers of high-carbon steel with copper to create a blade that delivers strong cutting performance and a striking, unique visual character. Each piece is unrepeatable and evolves naturally with use.
The blade core is made from Carbon Steel 1095 and 15N20, providing excellent sharpness, edge retention and responsiveness on the cutting board.
The handle is handcrafted to ensure comfort, balance and secure control during extended use.
Each blade is carefully sharpened by hand using Japanese water stones to guarantee a consistent, precise and reliable cutting edge.
