The Yanagiba knife is a traditional Japanese-style slicer designed for precision slicing of fish and meat. Its long, slender blade allows smooth, continuous cuts that preserve the texture and appearance of ingredients, making it ideal for sashimi, sushi and other delicate preparations.
With a generous 305 mm blade, this Yanagiba offers exceptional reach and control, enabling clean, uninterrupted slicing motions from heel to tip. Its profile is optimized for cutting thin, uniform portions with minimal effort.
This knife features a Gomai construction, built in five layers combining high-carbon 1095 steel and pure nickel. This layered structure provides a strong, sharp cutting edge with enhanced balance and visual character.
The handle is handcrafted from American walnut and brass, shaped for comfort, balance and secure grip during extended slicing tasks.
Each blade is carefully sharpened by hand using Japanese water stones to ensure a consistent, reliable, and precise cutting edge.

🧼 CARE INSTRUCTIONS
We recommend washing the knife by hand after each use and drying it immediately.
DO NOT USE DISHWASHER.
The blade will naturally develop a patina over time. This natural phenomenon does not affect the performance or quality of the knife and is a characteristic of carbon steel.
